Recipe

Cooking has always been something I have enjoyed doing. I can remember back when I would go spend the day at my Grandma Haney's house when I was off track and all I wanted to do was have her teach me how to cook. She truly was the best cook ever! I remember always telling her "Grandma when I grow up I am going to be a chef." My plans have changed since then, but cooking is still something I love to do. 

I am always looking for new recipes- asking my sister and my mom for ideas. I got 6 or 7 cookbooks when we got married and have been trying new stuff out all the time. 
Last night I found a recipe for  crock pot enchiladas. Thought we'd give it a try- and well we absolutely LOVED it.  
I decided it was worth sharing! So here you go! Try it for yourself, I don't think you will be disappointed. 

Crock Pot Enchiladas:
4 cups of cooked chicken/or 2 cans of chicken
2 cans cream of chicken soup
10 flour tortillas-cut into strips
Salsa
Cheese
Lettuce


**mix chicken, soup, salsa, and cheese together in a bowl. Lightly grease crock pot. Cut tortillas into 6-8 strips. Lay down a layer of tortillas, then a layer of chicken/soup/cheese/salsa. Another layer of tortilla... and so on. Make several layers of it. I did about 6. Cook on low for 4 hours.  I topped it with some shredded lettuce after- but you can add salsa, cheese, sour cream (anything you like) and ta-da! Enjoy!
